I'm not organized at all. I tend to spend a certain amount of time (say, a month) with little to no creative thought that can be easily translated into a poem or essay.
And then often there will be set amount of time (say, a week) when I'm highly creative and productive with my writing.
When I'm not swamped and have a project I'm working on (not a frequent combination), I can usually find about half an hour every day to sit at the keyboard and compose.
When I have too much else to do (that is to say, most of the time), I just try to carry a notebook with me for when thoughts occur.
Looking at my notebook, I'd say anywhere from daily to once every other week. As I noted in my own blog, I did succumb to image-purchasing impulse and bought a Moleskine notebook, but since I have, and since I can now carry a notebook in my pocket at all times, I've been jotting far more than I used to.

It's odd.

Cool.
How often do thoughts occur for you?
